They are fruits harvested at maturity, peeled green. The skin on the core can be easily removed, leaving the core white and brittle. We enjoy their flavor for a very short time, only a few weeks, in autumn, in September and October.

They are fruits harvested at maturity, after the green peel has cracked, they have a water content of up to 12% for the whole nut (and 8% for the core) due to the natural drying process. Store in a dry place, away from heat and moisture.

The dried walnut kernel is obtained from walnuts whose green skin has been removed naturally, by drying, or by mechanical processes. It has a water content of up to 8%, being very rich in minerals and vitamins.
